Simplicity (otherwise known as Potatoes and Eggs)

Here is a meal that my grandmother made for me time and again during my childhood. Potatoes and eggs with a handful of frozen peas thrown in. Three simple ingredients that are always around the house become just the perfect meal.

Grandmas are geniuses. Or is it genii? In any event, she’s a really smart lady. Make this and you’ll agree.

How? Chop leftover potato, brown in Pam or olive oil, add peas. Cook till thawed/hot. Add two beaten eggs, act like you’re making scrambled eggs. Do a little dance, dump it on a plate, salt, pepper, hot sauce, and flat leaf parsley if you have it on hand. If it happens to be lunch or dinner time, fill up the other half of the plate with some mesclun salad with a simple vinaigrette. Pour wine and dig in. Buon appetito!
